Turkey Tetrazinni
So it's not Thanksgiving but you still want Turkey. A rather well endowed turn of the century Italian opera soprano Louise Tetrazinni provided a solution. Combine Turkey with pasta and lots of cheese and bake it in the oven. Ahhhh the smell of turkey leftovers all over again. So if you can't get enough of the gobbler try this Tetrazinni melody.
I went on line and looked at a bunch of recipes the only common ingredient being turkey. I took the bits I like and put them together. Of course I'm making it for ninety so I didn't include the amounts - remember a recipe is only a suggestion and the café is not for the novice - you figure it out.
- Turkey Breast - cooked and cut into bite sized pieces
- Spaghetti - cooked and cut into 3 - 4 inch lengths
- Cream of mushroom soup
- Some Chicken broth
- A little Cream Sherry
- Ricotta cheese
- Parmesan cheese
- Seasoned Bread crumbs
Preheat oven to 350
Put cooked spaghetti in bottom of lightly greased casserole dish
Put Turkey on top - gobble gobble
Combine soup, broth & sherry - more soup than broth, more broth than sherry
Add cheese - more ricotta than parmesan
Cover with bread crumbs and bake until bubbly
Let it cool 15 minutes and then serve.
