Caribbean Chicken & Fruit Salad 
                      Marinade the chicken breast in a mixture of fruit juice - like Mango or Papaya, with some minced garlic, a jigger or so of dark Rum, some minced hot peppers of your choice and some olive oil. 
                      Refrigerate overnight.
          Place Chicken on a piece of foil
          Sprinkle with brown sugar
          Cover with thinly sliced onion
          Drizzle with fruit juice - like pineapple.
          Seal packet
          Bake at 350 º for 20 - 30 min. or until done.
          Serve with Rice mixed with Pineapple Chunks
                      
                      Fruit Salad
          Oranges
          Bananas
          White & Purple Seedless Grapes
          Yogurt
          Honey
          Peel and slice Oranges and Bananas.
          Put in bowl with grapes.
          Add yogurt to coat and honey to taste.
          Mix well.
          Let sit 30 min. to become acquainted
