Gazpacho Santa Fe

  • 1 large can Diced Tomatoes
  • 1 Cucumber - peeled, seeded chopped
  • 1 cup Chicken Broth
  • 2 Chilopte peppers in Adobo sauce seeded & diced
  • 2 Tbs. Adobo sauce from canned peppers
  • 1 jar Roasted Red Pepper - chopped
  • Juice of 2 large limes
  • Handful of fresh cilantro - chopped
  • Salt & Fresh Ground Pepper

Put everything in a blender and puree
Refrigerate until well chilled
Serve with garnish of sour cream, chopped avocado, diced jicama, diced green pepper
