Phil's Yet Another King Ranch Chicken

There are six things all King Ranch Chicken recipes have in common. They are chicken, cream of mushroom soup, cream of chicken soup, tortillas, tomatoes and cheddar cheese. As long as you have those ingredients you could add the kitchen sink and still call it KRC. The key to my version is the sautéed chicken, which unlike other versions using boiled chicken, doesn't really need the King Ranch. The other is Arriba® Salsa. Forget Rotel® tomatoes, Arriba® Salsa - mild, medium or hot - makes this King Ranch Chicken worthy of the legendary South Texas Ranch.

I've only made KRC in Texas size quantities so I've just used the amounts from another recipe. If it turns out too runny just call it King Ranch Chicken Queso.

  • 4 large chicken breasts
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 2 bags of Kraft Mexican Cheese
  • 1can diced Tomatoes
  • 1 jar Arriba salsa - mild, medium or hot
  • 6 flour tortillas cut into bite size squares
  • Butter
  • Olive Oil
  • Cajun seasoning
