Phil's Mesquite Grilled Chicken & Black Bean Salsa

"The best chicken I've ever had." Todd Jorgenson 4th grade

  • Start about a year ago by finding a Mesquite tree (it's the ugly one) cutting off some branches and stacking them in your back yard to "age." or
  • Buy a bag of Mesquite wood chips or
  • Get that Mesquite marinade and follow their directions


  • Chicken Breasts boned and skinned
  • Claude's Barbecue Brisket marinade
  • Marinade chicken most of the day
  • Prepare grill or better, a smoker if you have one
  • Grill/Smoke chicken
  • Let rest 5 min
  • Slice on diagonal and serve with salsa

Black Bean Salsa

  • Can of Black beans - minus can & liquid
  • Can of Corn - minus can & liquid
  • Large Tomato - diced
  • Green Pepper or Red Pepper - diced
  • A little or some Onion - red or white- diced
  • Your favorite hot pepper - diced
  • Garlic - a little or a lot - minced
  • Some fresh lime juice
  • Some Olive Oil
  • Salt & pepper to taste
  • A loose handful of Cilantro - chopped - added just before serving
  • Mix everything together
  • Let it sit overnight
  • Stir and serve with Chicken
