Phil's Mesquite Grilled Chicken & Black Bean Salsa 
                    "The best chicken I've ever had." Todd Jorgenson 4th grade  
                    
                        - Start about a year ago by finding a Mesquite tree (it's the ugly one) cutting off some branches and stacking them in your back yard to "age." or 
 
                        - Buy a bag of Mesquite wood chips or 
 
                        - Get that Mesquite marinade and follow their directions 
 
                       
                      Chicken 
                      
                        -  Chicken Breasts boned and skinned
 
                        -  Claude's Barbecue Brisket marinade
 
                        - Marinade chicken most of the day 
 
                        - Prepare grill or better, a smoker if you have one 
 
                        - Grill/Smoke chicken 
 
                        - Let rest 5 min 
 
                        - Slice on diagonal and serve with salsa
 
                       
                      Black Bean Salsa 
                      
                        -  Can of Black beans - minus can & liquid 
 
                        -  Can of Corn - minus can & liquid 
 
                        -  Large Tomato - diced
 
                        -  Green Pepper or Red Pepper - diced
 
                        -  A little or some Onion - red or white- diced
 
                        -  Your favorite hot pepper - diced
 
                        -  Garlic - a little or a lot - minced
 
                        -  Some fresh lime juice
 
                        -  Some Olive Oil
 
                        -  Salt & pepper to taste
 
                        -  A loose handful of Cilantro - chopped - added just before serving
 
                        - Mix everything together 
 
                        - Let it sit overnight 
 
                        - Stir and serve with Chicken
