Basic Tomato Sauce or Soup 
                    1 carrot peeled & diced 
          1 celery stalk diced 
          1 onion chopped 
          2 TBSP Olive oil 
          2 garlic cloves chopped 
          2 cups dry red wine 
          2 cups beef stock  
          4 cans diced tomatoes with Italian spices 
          2 TBSP sugar 
          salt & pepper 
                    Sauté carrot, celery & onion over medium low heat until soft about 10 min 
        Add garlic and sauté additional minute 
        Add remaining ingredients and cook partially covered for an hour or more stirring occasionally 
        Remove from heat and cool slightly 
                      This could be served as is as a chunky tomato sauce or you could do one of the following  
                      Option #1 - Tomato Sauce or Hearty Tomato Soup 
        Working in batches puree in blender or food processor 
        Return to heat  
        Adjust seasoning  
                      Option #2 - Thicker Tomato Sauce 
        Working in batches puree in blender or food processor 
        Add 1 can tomato paste  
        Adjust seasoning  
                      Option #3 - Tomato Soup 
        Working in batches push mixture through strainer or china cap 
        Discard solids 
        Return broth to heat  
        Adjust seasoning
